PARMESAN CRUSTED GROUPER

INGREDIENTS:
- ½ cup grated parmesan cheese
- 1/3 cup butter, softened not melted
- 2 tablespoons mayonnaise
- 2 scallions, thinly sliced
- 2 large or 4 small 1 inch thick grouper fillets
- 1 lemon
- Black pepper

PREPARATION:
- Preheat broiler to high.
- In a small bowl, combine the Parmesan, butter, mayonnaise, and scallions. Set aside.
- Place the grouper fillets on a lightly greased broiler pan. Squeeze the juice from 1 lemon over the fillets and sprinkle with black pepper.
- Broil 6 inches from heat for 10 minutes. Remove from oven. Spread the tops of the fillets with cheese mixture.
- Return to oven and broil for 2 minutes longer or until the topping is lightly browned and bubbly. Remove fillets to platter. Serves 4.
